Whilst PTFE and ceramic coatings are coated onto other metals to generate a nonstick layer, tricky-anodized aluminum has a nonstick floor that is basically “baked in.” It's made by electrochemically hardening smooth aluminum to really make it much better than stainless steel, and an oxidized top layer that is certainly also nonstick and harder
